4-Roll Sheeter
The T.L. Green Biscuit & Cracker 4-Roll Sheeter is a unique machine that generates a consistent, hole-free dough sheet ready for further thickness reduction or lamination. The upper set of rolls is grooved to provide positive dough feed from the dough hopper. The lower rolls can be smooth or grooved, depending on the application. In order to maintain a constant density of dough - and a smooth dough sheet - it is necessary to maintain a constant pressure in the cavity between the four rolls. A pressure transducer generates a signal that is transmitted to a system or machine PLC. The pressure is maintained by automatically controlling the speed of the upper rolls, providing a uniform dough sheet with minimal stress, sheer or crystallization. The thickness of the sheet is maintained by the gap between the lower set of rolls.
