New Baked Pita Chip System

Our new pita chip production system expands the capabilities of the RBS Multi-Crisp Technology by adding a multi-pass proofer, pita dicer, and a high heat application during the baking process that produces a baked pita chip.

The Thomas L. Green 3-Roll Sheeter produces a consistent dough sheet that is ready for dough forming or further reduction. Two forcing rolls draw the dough into the pressurized cavity between the three rolls, and the dough is compacted and discharged as a continuous sheet.

The Thomas L. Green Gauging Station is an essential machine in most cracker, biscuit, pizza, or chip production lines because it provides precise dough sheet reduction. Parallel, hardened rolls typically reduce the dough sheet thickness by a 3:1 ratio from infeed to discharge. The gap between the rolls can be automatically adjusted to maintain constant dough thickness.

The Thomas L. Green Rotary Cutting Station accurately and continuously cuts distinct shapes from a single dough sheet. An integrated conveyor system moves the product through, and during operation, operators can adjust the pressure on the dough sheet to ensure consistent piece production.

The Reading Bakery Systems Multi-Pass Proofer enables you to accelerate dough development time in a reduced footprint.  The color, texture, and flavor of the final product are all affected by the proofing process. When temperature and humidity levels are precisely controlled, product consistency and quality are enhanced.

Customers benefit from several heat transfer combinations in one modular design - radiation, convection, and conduction. The highly flexible platform is offered in several configurations with different heat transfer modules, allowing for more product variation with a simple adjustment.

The Reading Pretzel Multi-Pass Dryer reduces core product moisture to improve overall quality and storage characteristics. Air is heated in the penthouse above the Dryer and forced through the plenums surrounding the conveyor belts.

Beyond pita chips, bakers will be able to produce other multi-crisp snacks by bypassing the proofer and pita dicing steps.
