PRISM OVEN

Our Thomas L. Green PRISM OVEN is ideal for biscuit, cracker and cookie production with a single-pass baking platform that is designed to improve consistency and deliver uniform color, taste, texture and quality.

The oven offers direct gas fired (DGF), Emithermic (radiant/convection) and convection baking zones. Each zone is available with a variety of options that will create a cost-effective system with a combination of radiation, convection heating and conduction.

Control of the exhaust, air temperature and circulation velocity allow the operator to manage product moisture removal for maximum quality assurance.

The PRISM OVEN has excellent access for cleaning and maintenance and is available with full stainless steel construction where salt, corrosion or high humidity levels present a challenge.

Thermatec High Radiant Ceiling

The PRISM OVEN is now available with traditional brick or the new Thermatec High Radiant Ceiling, which replicates the thermal emissivity and storage of fire brick oven ceilings by using specially treated, anti-corrosive steel backed by a high-density insulating board.

The Thermatec High Radiant Ceiling radiates heat as effectively as fire bricks, is less expensive, and does not need the maintenance that fire bricks require.

Monitoring Performance

The best possible oven conditions can be maintained by monitoring performance with the unique SCORPION® 2 Data Logging Measurement System. This powerful tool contributes valuable data by measuring temperature, air velocity, heat flux and humidity in real-time, allowing our customers to optimize the conditions they need to produce the very best end product. The SCORPION® 2 system has become a baking industry standard.
