Cookie Baking Consistency
The Thomas L. Green PRISM OVEN is ideally suited for cookie, cracker and biscuit production with a single-pass baking platform designed to enhance consistency and deliver uniform quality, color, taste and texture. It offers direct gas fired, convection, and combination radiant/convection baking zones.
Customers appreciate its capacity for repeatable control of time, temperature, humidity and type of heat transfer. And an extremely cost-effective system can be created with a combination of radiation, convection heating and conduction.
The PRISM OVEN offers both recirculation and convection baking zones. Choose to optimize both zones by utilizing direct gas-fired sections for product development and “cooking” functions, and the convection zones for moisture removal and balanced coloring.
Modules are available in full stainless steel to address salt, corrosion and high humidity levels, and can be factory pre-built for fast installation or assembled on-site.
Monitoring Performance
Optimum process conditions can be maintained by monitoring oven performance with the unique SCORPION® 2 Data Logging Measurement System. This powerful diagnostic and evaluation tool contributes valuable data by measuring temperature, air velocity, heat flux and humidity in real-time, allowing our customers to optimize the conditions they need to produce the very best end product. The SCORPION® 2 system has become a baking industry standard.
Saving Energy
At Reading Bakery Systems, we strive to provide customers with energy efficient ovens by utilizing these and other measures: heat exchangers that use pre?heated exhaust air in convection baking zones; fuel flow meters to record fuel usage and identify opportunities for improvement; oven belts with lower mass densities; and downtime software during idle oven periods when no product is being processed.
