Dough Mixing

Dough mixing encompasses a variety of different objectives, including the hydration of the flour and incorporation of ingredients into the dough.

In commercial crisps applications, the ability to produce large quantities of consistent, uniform dough is very important. Moisture level and distribution are critical to the final product texture. Continuous Mixing eliminates the problems associated with batch cycles and allows for the accurate delivery of raw materials to the mixer at rates high enough to meet the demand of the mixing process.

The FX Continuous Mixer is ideal for baked crisps. It evenly distributes small amounts of moisture into large amounts of dry powder with a revolutionary design that lifts the powder into atomized liquids. The process is designed to prevent creating wet and dry areas in the final dough.

The FX Continuous Mixer can be used for corn chips, baked potato chips, veggie chips, potato snacks, rice crisps, stackable potato chips, and other low moisture mixtures.

Sheeting & Cutting

After continuous mixing, the single-reduction 2-Roll Sheeter will produce a continuous and consistent dough sheet and discharge it directly onto the Rotary Cutting Station infeed conveyor. The Rotary Cutting Station accurately and continuously cuts discrete product shapes by means of a rotating die assembly.
