Solving Baking Problems and Predicting Critical Oven Maintenance with the SCORPION® 2 Air Velocity Sensor Array

Reading Thermal air velocity sensor array exiting oven with biscuitsEven distribution of airflow is vital in maintaining the quality of product delivered by any oven system, however, airflow is one of the least understood control points for oven operators. The ability to see and understand airflow inside your oven can help you adjust your process to maximize quality, reduce waste and even predict oven maintenance. That’s where the new SCORPION® 2 Digital Air Velocity Sensor can help.

In this virtual seminar, we will show you how the Digital Air Velocity Sensor delivers a precise picture of airflow patterns inside an oven, from side-to-side and end-to-end. We will demonstrate how a product-level measurement of air velocity can help you spot airflow differences between baking zones, concentrated air velocities on isolated parts of the process, and unwanted air currents at the entrance or exit of the oven. For bakeries with ovens that have a lot of dampers to control, the Air Velocity Sensor can show the effects of each damper on the product. The new improved sensor along with the Statistical Process Control (SPC) function within our SV8 software can track changes over time to pinpoint areas of concern. With this level of historical tracking, air velocity can also show failing blowers/motors, blocked nozzles, and is even a means to track down the cause of oven fires.
